Typical Week Program

    Sunday: Arrival  and Welcome Dinner prepared by your instructor chefs and proprietors. Guests are accommodated throughout their stay in the charming, air-conditioned rooms of this fabulous 11th century monastery...now forming part of the hotel.

    Monday: With the open-aired markets being closed today, this cookery lesson is based on meat dishes and all the fragrant Provence herbs used to make them really delicious. Today will include an outing into the beautifully scented hills allowing you to pick just the right fresh herbs for your recipes.

    Tuesday: Early morning visit to Sanary Harbor to watch the fishing boats come in and get the best pick of today's catch!. Today's lesson will be using your latest catch in a fish-based dish., such as 'bouillabaisse'. Afternoon visit to a vineyard to taste some of the excellent Bandol region appellation wines and learn how to accompany your culinary creations with 'le vin parfait'!

    Wednesday: This morning, a local farmer delivers the seasonal vegetables to be cooked up into an authentic Provencal vegetable stew...'ratatouille'. This afternoon, you will visit a charming olive grove and learn how to prepare the local specialty 'tapenade', made with ground black olives.

    Thursday: Today's program concentrates on breads and ...ah yes...desserts...one of Chef's specialties...the pastries! Free time after lunch ...you may want to go and explore the picturesque village of Le Castellet, with its many arts and crafts boutiques, just across the valley...or perhaps a visit to Cassis.

    Friday: The Cooking School ends after breakfast this morning.
