This delightful and much sought-after residential course on culinary traditions in Provence runs over 4 days and 5 nights, with daily activities from around 10:00am to 4:00pm, plus early morning visits to local markets.
Course only offered in December; the "prime time" for truffle harvesting!
TRUFFLES TYPICAL PROGRAM
Sunday: Arrival at the 3-Star Hostellerie Bérard and Welcome Dinner prepared by your instructor chefs and proprietors. Guests are accommodated throughout their stay in the charming, air-conditioned rooms of this fabulous 11th century monastery...now forming part of the hotel. All classes in the special farmhouse adjacent to the Hostellerie designed by Chef for plenty of kitchen space and hands-on counter preparation areas, ovens, and utensils. Instruction in English & French.
Monday: Tuesday: Wednesday: The first
three days - Monday, Tuesday & Wednesday - will feature recipes and dishes
specializing with truffles and mushrooms.
Thursday: Early morning departure with a bus (included in pricing) for a truffle market in the Haut Var Region of France (approximately a two hour drive). Your class will meet with a "truffles hunter" and he will provide explanation of different methods of search. After an overview, it's off to search for truffles all together in the landscape; this lasts about one hour, followed by a visit of the truffles market itself. Lunch as a group together with your "hunter" in a special restaurant featuring truffle menu items. After lunch, return to hotel via bus.
Friday: The Cooking School ends after breakfast.
